Kale and Pineapple Green Smoothie
This nutrient rich, high fiber smoothie makes for an excellent breakfast or mid-morning snack. If you are not a fan of the taste of kale (it is an acquired taste, after all), this kale smoothie is an excellent choice as the taste of the kale is barely perceptible, masked by the fruit.
2 cups kale (chopped)
2 apples, cored, peeled, and quartered
1 cup pineapple, chunked
1 ½ cup water (can be replaced with apple juice for sweetness)

Coconut, Grapefruit, and Kale Smoothie
A very distinctive tasting smoothie. Although this might not be for everyone, we certainly enjoy this one at home. It is slightly bitter, though the fruit and coconut keep it from being too overpowering. If it is not to your liking, you could further sweeten with some pineapple or fruit juice, though I haven’t needed to do so. I’ve found the unorthodox combination of fruit and grapefruit to be delicious. In addition to the kale, you also have grapefruit (known also known for its health benefits) and spinach (see: Popeye), making this kale smoothie one of the healthiest things you will eat all day.
½ grapefruit, peeled and seeds removed
1 kiwi, peeled
1 banana, peeled
2 cups kale, chopped
8 ounces coconut milk, unsweetened
2 cups baby spinach
